
OK, it's here! Many of you have requested an Indian Cooking Class, and we have a great class scheduled at Passage to India in Bethesda. This is a fantastic restaurant, and was voted as one of Washington DC's "Best 100" restaurants. Our Executive Chef guiding us through this culinary journey is owner Sudhir Seth. I've met with Sudhir, he's a great guy, and he's really looking forward to hosting our group at his restaurant.
Please know this is a DEMONSTRATION cooking class. There has been some confusion in the past. We considered doing "hands-on" classes, but providing cooking stoves and gear to 40+ people makes the cost prohibitively expensive.
We will have 4 "rounds" of cooking, where each round demonstrates the preparation and cooking of a different dish. At the end of each round, you get to eat the dish you just learned to make!
We will begin by sampling Naans, Parathas (Assorted fresh baked Tandoori breads) to settle our stomachs as we watch the first dish being prepared. The dishes we will learn to cook (and get to eat!) are as follows:
1. Dum Ka Murg (chicken Mughlai style cooked en-daube)
2. Aloo Gobhi Chorchori (potatoes and cauliflower with 5 seed tempering)
3. Parappu Columbu (pigeon pea lentils with mustared and curry leaf)
4. Shahi Kheer (rice pudding with dry fruits and nuts)
The above dishes will be served with the following accompaniments:
-Zafrani Pulao (basmati with saffron)
-Raita (churned, spiced yogurt with mint & cucumber)
-Salad
Passage to India is on Cordell Ave in Bethesda. The closest metro stop is Bethesda on the Red Line.
